CHOCOLATE MERINGUE PIE

1-1/2 c. sugar

3 tbsp.  Hershey's Cocoa

4 egg yolks, separated. and beaten

1 tsp. vanilla

4 tbsp. flour

1 large can Carnation

1 c. milk

1 tbsp. butter

1 tsp. vanilla

1 baked pie shell

Put all of the dry ingredients in a sauce pan. Add both milks and eggs. Cook until thick and smooth 

Add butter, and vanilla. stir well. Pour into a pre- baked pie crust. Cool and top with meringue.

Meringue

4 egg whites 

2 tbsp. powdered sugar

1tsp. cream of tartar

1/2 tsp vanilla

Beat the egg whites a bit and add sugar, cream of tartar, and vanilla. Beat until the whites are really stiff, and make peaks. Put on the pie, touching the crust all around. Spread the meringue on top and make swirls. Bake in a 325 degree oven for just a few minutes until it is brown on top. Check it often to avoid over browning.


PINK FRUIT SALAD

1 Carton heavy whipping cream

1/2 c. sugar

1 tsp. vanilla

4 drops red food coloring

2 apples, sliced

1 can mandarin oranges

1 can pineapple chunks

3 bananas sliced

maraschino cherries to decorate top

Add the sugar and vanilla to the cream. Whip until thick. Add fruit, stir. Add maraschino cherries on top. 





FRESH STRAWBERRY PIE This is an amazing pie.

3 c. fresh strawberries, sliced

1 c. sugar

3 Tbsp. corn starch

1/2 c. water plus 2 Tbsp. water

1 tsp. lemon juice

1/2 t. red food coloring

1 baked pie shell

1 carton whipping cream

1/4. c. sugar for cream

1 tsp. vanilla for cream

Combine sugar and cornstarch, add 2 T. water. Mix into paste. Boil water in a saucepan. Add sugar mixture, and   boil until thick and clear. Add lemon juice, and coloring. Cool, and fold into strawberries. Put into baked pie crust. Chill pie. Whip cream with sugar, and vanilla. Serve with pie.
